Quesadilla Trio

Over February break I went to Florida to visit my Grandparents. Most nights we go out to dinner, one of my favorite restaurants is called Rocco's Tacos. I usually get tacos when I go to Rocco's Tacos, but this time  I decided to get a spinach and goat cheese quesadilla. When I ate it I was pleasantly surprised at how flavorful yet simple it was, giving me the idea to replicate this dish myself. A few weeks later I decided to try to make this dish myself, but instead of just one quesadilla I decided to make three. Since I love mushrooms and chorizo I wanted to try to incorporate those ingredients into my recipe. I made a goat cheese and spinach quesadilla, a mushroom and paper jack cheese quesadilla, and a chorizo and monterey cheese quesadilla. I hope you enjoy my recipe for a quesadilla trio!

Ingredients:

Spinach and goat Cheese:
One 6 ounce bag of spinach
1 garlic clove
1 tablespoon olive oil
1/4 cup crumbled goat cheese
2 corn tortillas

Mushroom and Monterey Jack Cheese:
1/2 cup monterey jack cheese
8 ounce box of mushrooms
1 clove garlic
2 tablespoons olive oil
2 corn tortillas

Chorizo and Monterey Jack Cheese:
2 chorizo sausages, finely chopped
1/2 cup monterey jack cheese
1/2 tablespoon olive oil
2 corn tortillas

First cut the mushrooms and garlic. Then sauté these ingredients in a pan with olive oil. Once cooked put into a bowl to cool.


Next sauté the spinach and garlic in olive oil until wilted. Once fully cooked place the spinach into a bowl to cool.


Chop up the chorizo into small pieces and sauté with olive oil until crispy, then put the sausage in a bowl to cool.


Using a paper towel gently press on the spinach to take out the moisture, do this until it is as dry as possible. Do the same to the mushrooms, this makes sure that the tortilla does not get soggy.

Then assemble the quesadillas by placing cheese and your desired about of filling onto the tortilla, then place another tortilla on top.


Cook the quesadillas for about 3 minutes on each side or until the tortilla becomes brown and the cheese is melted.


Serve and enjoy!
