Coconut Curry Shrimp

To be honest I am not the biggest fan of Asian food. I love Italian food, Mexican food, and French food, etc. but for some reason Asian food does not appeal to me. A few nights ago my parents went out for dinner which gave me the opportunity to cook myself dinner. For some odd reason I was craving coconut curry and I decided to make it. The curry, spice, and coconut flavor together makes the perfect flavor combination. I hope that you enjoy my recipe for Coconut Curry Shrimp!

1/2 pound shrimp
1/4 cup onion
1/4 cup red pepper
1 garlic clove
1 cup coconut milk
3/4 teaspoon curry powder
1/2 teaspoon cumin
1/4 teaspoon coriander
1/2 teaspoon salt
juice of half a lime
4 basil leaves
Sriracha to taste

First sauté the shrimp in a little olive oil for about 1 1/2 minutes on each side then put into a bowl and set aside.


Then sauté the garlic, onion, and red pepper until the onion is translucent and fully cooked. To the onion mixture add the curry powder, cumin, coriander, and salt and mix until fully combined. Next add the coconut milk, Sriracha, basil, and lime juice to the onion mixture and let it cook for about a minute.


Serve the curry over some rice and enjoy!
